Ingredients
2 lbs ground beef or turkey
1 tsp salt
1 pkg. taco seasoing
1 cup diced fresh tomatoes
1 4oz. can green chilies
2 (8oz) can tomato sauce
8 oz. ricotta cheese
2 eggs
9 corn tortillas
10 oz. Jack cheese, shredded
1 box frozen chopped spinach
(microwave 1 min and drain)
Preparation
Brown meat, drain, add salt, taco seasoning, tomatoes sauce, green chilies and diced tomatoes Mix and bring to a boil; simmer uncovered 10. minutes. Combine ricotta cheese, spinach and eggs. In a 13x9 pan, spread 1/2 the meat mixture, 1/2 the tortillas that have been cut into strips and 1/2 ricotta mix. Top with 1/2 of the Jack cheese. Repeat. Bake uncovered in 350 degree oven for 20-30 minutes. Let stand for at least 10 minutes. Easily packed in a pyrex and transported for the GAME!
