Ingredients

*1-2 lg. spanish onion, minced fine

*1-2 large red/green pepper minced fine

4-6 inches of a bunch of celery minced fine

1 can consomme

3-6 TBS. chili

3/4 c. flour

2 tsp. oregano

2 tsp. cumin

2 Lbs. Velvetta cheese (hot if desired)

Preparation

Cook/fry meat until done. Saute veggies in meat if there is enough liquid/fat (in olive oil if not). Add veggies to meat.

When cooked add chili, oregano, cumin, and mix. Then sift flour over the top and mix in for 1-2 minutes.

Assemble in baking dish alternating layers of the mixture and a layer of thick slices of Velvetta until all is used.

Cook at 350 for 30 minutes (until mixture is bubbling/in corning ware, covered casserole), stir and serve with cup shaped corn chips.
