Ingredients

1/2 lb Spaghetti

1/2 lb Pancetta

1 bunch green onions

4 eggs

1 C mixed Italian cheeses: Parmesan, Romano, etc

Preparation

Cook pasta in boiling salted water.

Dice the pancetta. Cook in large pan until done. While pancetta is cooking, slice green onions and set aside.

Beat eggs until all one color. Stir cheese into eggs and mix well and set aside.

When pancetta is done -DO NOT DRAIN-

Add in drained pasta, mixing to coat. Turn off heat.

Add onion and egg mixture stirring until just cooked.

Serve immediately.
