Ingredients
8 Chicken thighes
8 tsp of mild or medium mango chutney
1 tsp ground chipotle
1 tsp sweet paprika
Preparation
Preheat oven to 220°C (broil/grill). Place chicken in deep dish. Broil for 5 minutes. Remove and cover chicken. Cool oven to 180°C (bake) and replace chicken. Cook for 25 minutes.
Mix chutney, chipotle, and paprika. After removing chicken, turn grill back on and heat oven to 190-195°C. baste chicken with mixture. replace chicken in oven for 10 minutes.
Serve with a veg, and with either french fries, or roasted potatoes.
