Ingredients

9 oz Caster Sugar

9 oz Butter (Softened)

7 oz Cooking Chocolate

5 oz Corn Flour

5 oz Flour

3 oz Almonds (Flaked)

1 tbl Rum

1 tsp Lemon Zest (Grated)

5 Eggs (Beaten)

Preparation

  1. Take a large bowl and combine the sugar, butter, lemon zest, salt, almond flakes, rum and beaten eggs until smooth.
  2. Now spread a spoonful of the mixture over the bottom of a greased 9" cake tin.
  3. Place in an oven preheated to 350 F and bake for about 2 minutes or until brown.
  4. Once cooked, spread another spoonful on. Repeat the process until all the mixture is used.
  5. Lift out of the oven to cool on a wire rack.
  6. Put the cooking chocolate into a bowl and melt over a saucepan of hot water.
  7. Spread over the top of the cake.
  8. Decorate with grated chocolate.
