Ingredients
2 tablespoons olive oil
1 medium onion, diced
1 medium carrot, shredded
2 cloves garlic, minced
½ cup red bell pepper, diced
½ cup yellow bell pepper, diced
½ cup orange bell pepper, diced
2 teaspoons dried thyme
1 28oz. can crushed tomatoes
1 tsp. salt
½ tsp. pepper
1 pound raw jumbo shrimp, peeled, deveined, and tails removed (21-25 shrimp)
¼ cup fresh parsley, minced
Cooked pasta (such as Farfalle or Penne)
Parmesan cheese (optional)
Preparation
Add olive oil to large sauté pan over medium heat. Add onion and carrot, and sauté for 8-10 minutes until golden brown. Add garlic, peppers, and thyme, and sauté for 5 minutes longer. Add crushed tomatoes, salt and pepper, and reduce heat to simmer. Simmer for 20 minutes. Add raw shrimp to sauce along with parsley and simmer 5 additional minutes. Serve over cooked pasta. Sprinkle with parmesan cheese if desired.
