Ingredients
1 1/2 cup Contadina® Diced Tomatoes
1/2 cup Contadina® Tomato Sauce
4 6oz pieces Tilapia (or other flaky white fish)
4 oz medium shrimp, peeled and deveined
4 oz lump crabmeat
1 tsp fresh lemon juice
1/2 tsp coarse salt
1/4 tsp crushed red pepper
3 oz sliced almonds
4 tbsp unsalted butter, softened
1 tsp fresh lemon zest
1/2 cup feta cheese, crumbled
Minced Italian parsley to garnish
Preparation
- Place fish on a baking sheet lined with parchment paper.
- In a medium mixing bowl gently combine shrimp, crab, lemon juice, salt and pepper. Spoon evenly on top of fish pieces.
- In a small mixing bowl combine almonds, butter and lemon zest. Place 1/4 of this mixture on each fish piece. Top with a mixture of tomatoes and sauce.
- Bake in a 400 degree oven 5 minutes. Top with the feta cheese and bake an additional 3 to 5 minutes or until cheese softened and fish cooked through.
- Remove and plate then top with parsley.
