Ingredients
3 Tbsp. olive oil
1 orange pepper, chopped
1 Anaheim pepper, chopped
1 yellow onion, chopped
6 garlic cloves, chopped
16 oz. frozen sliced okra
28 oz. can of diced tomatoes
16 oz. can of black-eyed peas
3/4 cup raw brown rice
1/2 cup frozen peas
4 cups vegie broth
1 cup sherry
1/4 cup cider vinegar
1 tsp. ground cumin
1 tsp. salt
1/2 tsp. fresh ground black pepper
1 tsp. green Tabasco sauce or any hot sauce
Preparation
In a big pot, saute in olive oil until tender - the peppers, onion and garlic. Add the remaining ingredients. Bring to a boil, lower heat and simmer, covered, for one hour. Add more broth or water, if desired.
