Ingredients
3 Large cans tomato sauce (no flavoring)
1 small can tomato paste (no flavoring)
3 2oz jars of baby food carrots (organic is best)
1 medium red bell pepper
3 cloves garlic (crushed)
4-6 Tbsp. parsley (crushed or finely chopped)
1 - 1 1/2 cups extra virgin olive oil (start with 1 cup and add more as desired)
Preparation
Heat olive oil in extra large sauce pan. Add finely chopped red bell pepper (or puree pepper in food processor); baby food carrots; crushed garlic and parsley. Saute until pepper and garlic are soft. Add tomato sauce and tomato paste. Simmer on low heat for 2-3 hours. Serve over any type of pasta.
