cups cooked regular long-grain white rice (cooked as directed on package, omitting margarine and salt)

large tomato, finely chopped

small ripe papaya, peeled, seeded and coarsely chopped

medium jalapeño chiles, seeded, chopped (2 tablespoons)

cup loosely packed chopped fresh cilantro

tablespoons finely chopped red onion

teaspoons sugar

teaspoon cumin

teaspoon salt

teaspoon coarse ground black pepper

Preparation

In large bowl, combine all ingredients; toss gently to combine.

Serve immediately, or cover and refrigerate until serving time. Bring to room temperature before serving.
