Ingredients

Salmon fillet, 1/4 lb. per person

Macadamia nuts

Sliced pickled ginger

Marmalade or preserves, regular or low sugar, orange, lemon, or mango flavor

Preparation

  1. Preheat oven to 325°.
  2. Line an oven-proof dish with aluminum foil.
  3. Rinse the salmon and pat dry.
  4. Place the salmon on the foil in the dish, skin side down.
  5. Thinly spread the marmalade or preserves on top of the salmon.
  6. Place slices of the pickled ginger over the marmalade to cover the top of the salmon.
  7. Chop enough macadamia nuts to thinly cover the surface of the salmon.
  8. Bake the salmon to your desired degree of taste. 15-25 minutes.
  9. When done, remove from oven and carefully insert a spatula between the foil and skin to remove the salmon from the dish. The skin should stick to the foil.
