Ingredients

1 medium sized ripe papaya, peeled, seeded and chopped

1/2 cup red onion, chopped

1/4 cup fresh cilantro, chopped

2 tablespoons fresh lime juice

1/2 teaspoon grated lime peel

1/2 teaspoon salt

1/2 teaspoon liquid hot pepper sauce (or to taste)

Preparation

Combine all ingredients in a small bowl. Let stand at room temperature for 10 minutes or up to two hours. Serve with chips or with Cuban Rice and Beans.
