Ingredients
2 avocados, diced
2 mangos, diced
1 sweet onion, diced
1 jalapeno, seeded and finely chopped
1/3 cup cilantro, chopped
1/3 cup mint leaves, chopped
1/3 cup fresh lime juice
1 lb. large shrimp, cooked and deveined, tails removed, cut into bite-size pieces
salt and pepper to taste
4 10-inch flour tortillas, cut into 2 inch strips.
Preparation
Place tortilla strips on a baking sheet. Sprinkle with salt. Place sheet in a 350 degree oven until strips are golden brown, about 15 minutes. Combine remaining ingredients in a medium bowl. Can be served immediately, or chilled for up to 4 hours. Place a mound of salad on plate and surround with tortilla strips.
