Ingredients

1 bag baby greens or spring mix, washed and dried

1 ripe mango, chopped

1/2 red pepper, chopped

1 ripe pear, chopped

1/2 red onion, chopped

1 cup pistachios, shelled and chopped

1/2 cup raisins or dried cherries

3/4 cup of crumbled blue cheese

Salt and pepper to taste

French Vinaigrette

1 clove of garlic, chopped

1 tsp. salt

1 tbsp. dijon mustard

1/4 cup balsamic vinegar

3/4 cup of olive oil

Preparation

Place the greens in a serving bowl. Top with the mango, red pepper, pear, red onion, pistachios, raisins and blue cheese.

For vinaigrette, mix garlic, salt, mustard and vinegar well. Very slowly, whisk in the oil until it is all incorporated.

Add enough vinaigrette to coat salad and gently toss. Season with salt and pepper and serve.
