Ingredients
2 red bell peppers
1 poblano pepper (or other similarly sized, low-medium hot pepper)
1 mango
1 tomato
1/4 tsp nutmeg
1/4 tsp cinnamon
1/4 tsp onion powder
a bit less than 1/4 tsp garlic powder
1/4 tsp cumin
1/4 tsp coriander
1/4 tsp powdered ginger
1/4 tsp salt (or to taste)
2 tsp apple cider vinegar
1/2 cup water
Optional: 1/2-1 jalapeno pepper, depending on if you like “hot” or not.
Optional: a bit of brown sugar to taste if the mango doesn’t make it sweet enough (it usually does).
Preparation
Remove skin from mango. Chop mango, peppers, tomato and put in sauce pan. Add water and spices. Bring to a boil, then reduce heat, cover and simmer for 15-20 minutes, stirring occasionally. Remove from heat and puree in a blender – I make it as fine as possible. Use and enjoy!
