Ingredients

1 c sugar

1/3 c cornstarch

2 c buttermilk

3 slightly beaten egg yolks

1 t vanilla

1 T butter

2 T apple jelly

1 baked 9 inch pie crust

Preparation

-mix sugar and cornstarch thoroughly gradually stir in buttermilk and cook over medium heat in a heavy pott stirring constantly until mixture boils and thickens

-slowly stir 1/2 mixture into beaten egg yolks and then back into saucepan until mixture thickens again (about 3-5 minutes) stir constantly

-remove from heat and blend in butter, apple jelly, and vanilla

-cool and pour into pie shell
