Ingredients
11/4 cups sour cream
2 TBSP minced parsley
2 TBSP white wine vinegar
1/2 tsp celery seed
1/2 tsp salt
1/8 tsp pepper
3/4 cup (3 oz) blue cheese, crumbled
4 cups (11/2 lbs) cooked red potatoes
1/2 cup celery diced
1/2 cup green onions sliced
1/2 cup sliced water chestnuts optional
Preparation
- Combine sour cream, parsley, vinegar and seasonings. Mix well. Stir in blue cheese.
- Combine potatoes, celery, onions and water chestnuts if using. Add sour cream mixture and toss lightly.
Serves 6
