Ingredients
2 c. all-purpose flour
1 c. (2 sticks) butter (cold or frozen)
pinch salt
1 tsp sugar
1 egg
1 Tbsp apple cider vinegar
1/2 c cold water
Preparation
Combine flour, sugar, and salt in the bowl of a food processor. Drop cold butter in approx. tablespoon chunks while processor is running. The mixture should be the consistency of corn meal. Hint: don’t let it run too long or the butter will warm up.
Pour mixture into a bowl. Make a well in the center and add the egg, vinegar, and water. Beat the egg a bit, then start to combine with the flour mixture with a spoon. Once you can’t mix with the spoon any longer, start kneading a bit by hand in the bowl (push in the center of the dough, and fold). Once all is combined, wrap ball in plastic wrap and refrigerate until cold (or place in freezer for longer storage; thaw before use).
