Ingredients
Olive oil
1 green or red sweet pepper, cut in small chunks
1 onion, roughly chopped
1 or 2 cloves garlic, minced
1 can diced (or stewed) tomatoes
1 can light or solid white tuna, drained
1 8 oz. can sliced mushrooms, drained (optional)
15 or so Spanish (or kalamata) olives, roughly chopped
4 oz. or so spaghetti or other pasta
Grated parmesan or similar cheese
Fresh ground pepper
Preparation
Heat a little olive oil large skillet. Add onion, pepper and garlic and saute, stirring occasionally until soft. Add tomatoes. Cook over med. low for about 15 minutes, stirring occasionally.
Stir in drained tuna, breaking it up. Add mushrooms, if using. After it warms a bit, add olives. Stir and heat for about 1 minute.
Serve over pasta, with grated cheese and fresh ground pepper.
