Ingredients

2 cans 4.5 ounces of Albacore Tuna in Water.

1 scallion (Green Onion)

2 garlic cloves finely chopped.

¼ Red bell pepper finely chopped

1 tbsp Mayonnaise

1 tbsp Yellow Mustard

1 tsp Paprika

¼ medium onion finely chopped.

2 eggs

1 celery stack finely chopped.

Extra virgin Olive oil

Salt and pepper to taste

1 bag fresh mixed greens

Ranch Dressing to taste

Parmessano Regianno Shavings.

Preparation

Yield 10 CAKES Cooking Time: 30 minutes Preparation time: 5minutes

Combine all ingredients in a bowl, and with your hands make little balls, to then form them into patties, while doing that heat the olive oil, so you can lay the patties, cook for about 2 to 3 minutes each patty, turning once or twice until golden brown. Once cooked arrange greens at the bottom of a plate lay down the cakes on top of the greens, add your dressing sprinkle with shavings of Parmessano Regiano Cheese.
