Ingredients

2 cups cooked rice

1 egg

1T. olive oil

several pinches herbs/spices of choice (suggest dill, tarragon, basil, chili pepper flakes)

1 can tuna packed in water

3 eggs

1 c. grated pepper jack cheese

several pinches herbs of choice (see above suggestions)

1 c. non-fat milk

Preparation

Cook rice and allow to cool; preheat oven to 350 degrees. Spray 9" pie plate with non-stick spray. Combine rice, olive oil, 1 egg, and herbs/spices; line pie plate with rice mixture to make ‘shell’ for pie.


Drain tuna; flake with fork and place on bottom of rice shell. Combine remaining ingredients; pour into pie shell and bake for 55 minutes. Allow to cool for about 5 minutes; slice and enjoy!
