Ingredients
2 eggs, hardboiled in advance then finely chopped
1 can tuna in oil
Half teaspoon garam masala or medium spice/chilli powder
1 half of a small onion or a quarter of a medium onion, very finely diced
4 mushrooms, button, brown, portobellini or similar, finely sliced
1 clove garlic, minced
1 medium tomato, diced, or 6 to 12 cherry tomatoes, halved
1 tablespoon of your choice of a combination of herbs: coriander, basil, fennel, parsley or dill - fresh, rinsed and chopped
Half teaspoon white pepper
Quarter teaspoon salt
1 thick slice cheese: cheddar, gouda, gruyere, emmental or similar, diced
2 handfuls of fresh green leaves - lettuce, spinach, chard, watercress, rocket - washed and finely torn
6 slices wholewheat bread
1 tablespoon butter
Preparation
Butter one side of each slice of wholewheat bread; lay down inside-out with unbuttered faces towards you.
In a bowl mix tuna & tuna oil, spice, onion, mushroom, chopped egg, garlic, tomato, herbs, and seasoning.
Microwave bowl on high for about 2 minutes, stirring now and then.
In a medium-hot frying pan lay 3 slices of bread, butter-side down.
Place half the green leaves on bread, then the cheese, then the warm herby flavourful tuna/egg/mushroom/tomato mix
Finish with remaining leaves and top with bread, butter-side up.
When the underside is golden and crispy, turn sandwiches and cook until the other side is golden and the cheese is partly melted.
Cut into halves and enjoy.
