Ingredients

12 oz sushi quality tuna

1 1/2 tsp freshly grated ginger

1 T cilantro, sliced

2 tsp minced jalapeno

2 T canola oil

1/2 tsp sriracha chili pepper sauce

1 T wasabi paste

1 T minced scallions (white parts only)

sea salt and pepper to taste

1 lemon halved

won ton chips

Preparation

Dice tuna into 1/4" pieces and combine with ginger, cilantro, jalapeno, canola oil, sriracha, wasabi and scallions, mixing gently with chopsticks. Season with salt nad pepper. Spoon euql amounts of the tartare into the centers of 4 plates. Squeeze lemon over tuna, surround tuna with chips nad serve immediately
