Ingredients

Bluefin Tuna

3 shallots

60g ginger

2 cloves garlic

125ml vegetable oil

100ml sesame oil

100ml soy sauce

60ml oyster sauce

30g caster sugar

Preparation

Thinly slice the shallots, julienne the ginger, finely chop the garlic, Place ingredients in a suacepan with the veg and sesame oil, cook on a medium heat until the vegetables are golden and crispy. Add teh soy and oyster sauce along with the caster sugar and cook for a further 5 minutes. Remove from heat and allow to cool.

Slice the runa, arrange on a plate and sppon the dressing over and serve
