Ingredients

1 T. olive oil

3 garlice cloves, minced

1 lb. ground turkey

1 large onion, chopped

1 T. chili powder

1 t. ground cumin

1 t. oregano

salt and pepper to taste

1 3/4 c. chicken broth

1 c. prepared salsa

1 can black beans, rinsed and drained

1 c. frozen corn

Preparation

  1. Heat oil over medium heat in a stock pot or dutch oven. Add onions and garlic and cook until soft.
  2. Add turkey and spices. Cook until turkey is well browned, stirring often to separate meat.
  3. Stir in broth, salsa, beans and corn and heat to a boil.
  4. Reduce the heat to low and simmer for 30 minutes.
  5. Serve with green onions, sour cream and cheese as a garnish.
