Ingredients

1 small onion peeled

1 lemon

12 sage leaves

1/2 cup fresh parsley

3 T olive oil

1 t sail

6 bay leaves

4 T butter

2 - 2 1/2 lbs turkey breast

Black pepper

1/3 c brandy calvados

2-3 c apple cider

Preparation

Pulse onion and lemon zest in food processor, add fresh sage, parsley, olive oil and salt until a paste forms

Melt butter and 2 bay leaves over medium low heat till bubbling

Put paste under loosened skin

Bake at 350
