Preparation

Clean and rinse turkey and place in two 30-gallon plastic trash bags. Combine 7 quarts of water, and all other ingredients in large pot. Stir until salt and sugar dissolve. Add ice cubes. Pour brine over turkey. Seal bags and refrigerate 18 hours.
