Ingredients
Olive oil
1 cup mayonnaise
1 cup chopped fresh basil
3 tablespoons chopped pickles
2 tablespoons brine from pickle jar
1 handful fresh chopped chives
1/2 finely chopped onion
1 1/2 pounds ground turkey
4 slices of bread or buns
4 slices of tomatoe
Preparation
Mix mayonnaise, half the chopped basil, chopped pickles, brine, and onions and chives in a small bowl. It also helps to grill if you put a couple of tablespoons of olive oil in this mixture. Season basil mayonnaise with salt and pepper. Mix chicken and 1/2 cup basil mayonnaise mixture in a large bowl. Using wet hands, shape chicken mixture into 1/2-inch-think patties. Sprinkle with salt and pepper. Oil bread. Grill bread until crip and golden. Grill burgers until firm to touch and cooked through (approx. 5 min per side). Spread bread with basil mayonnaise. Tope each bread slice with tomato, basil leaves, burger, and dollop of basil mayonnaise.
