Ingredients

1.25 lb ground turkey

2 cans white beans, drained

1 small can mild green chiles

1 t oregano

2T cumin

1 small onion chopped

1 T olive oil

1T cornstarch

hot sauce to taste

Preparation

Sautee onion in olive oil over medium high heat. Add green chiles, cumin and oregano and cook one minute. Add ground turkey and cook until no longer pink. Add beans and 3 cups of water. Cook, covered, for 45 minutes at low boil. Add cornstarch, disolved in 3 T water. Turn off heat and salt, pepper, and hot sauce to taste. Serve over rice.
