Ingredients
1 medium onion, diced
1 medium green bell pepper, diced
2 tablespoons minced garlic
1/2 pound ground organic turkey breast meat (may sub tofu or tempeh)
1-2 teaspoon ground cumin
1/2 teaspoon ground chili powder
3 tablespoons chopped fresh oregano
2 cups organic cooked chili beans (any beans you like)
1 14 ounces can diced organic tomatoes with juice
4 cups chicken stock (homemade is the best but organic will be fine)
1 cup diced mixed vegetables (your choice squash, zucchini, broccoli etc.)
Salt and pepper (adjust seasonings to taste)
Preparation
- Heat a large soup pot to medium and add onion, pepper, and garlic.
- Cover and let sweat until soft.
- Add ground turkey and sauté until cooked through.
- Add cumin, oregano and chili powder and cook 2 minutes.
- Stir in remaining ingredients and bring to a simmer.
- Simmer 20 minutes.
- Adjust salt and pepper and other spices to your taste
- The flavor will develop if made one day in advance.
