Ingredients

4 tbsp olive oil

2 lb ground turkey

1 tsp salt

2 lg onions, diced

4 garlic cloves, minced

1 cup diced bell peppers

1.5 tbsp chili powder

1 tbsp dried oregano

1 tbsp freshly ground cumin

2 28 oz cans diced fire roasted tomatoes with liquid

1 16 oz can pinto or red beans, drained and rinsed

1 16 oz can black beans, drained and rinsed

2 cups low-sodium chicken stock

Salt & Pepper

Hot sauce

Preparation

  • Heat 2 tbsp olive oil, add turkey and salt and brown. Remove from pan.
  • Add 2 tbsp olive oil to pan and saute onion and garlic until golden brown.
  • Add chili powder, oregano and cumin and saute for 1 minute.
  • Add tomatoes, turkey, beans, peppers and chicken stock and bring to boil.
  • Simmer for 30 minutes.
  • Salt & pepper to taste.
  • Serve with hot sauce.
