Ingredients
1 cup of chicken broth
one 16 oz. jar of salsa
1 onion, chopped fine
3 cloves of garlic, minced
1 lb. ground turkey
flour tortillas
one can of refried beans
two cups of shredded cheddar cheese
Preparation
Preheat the oven to 350 degrees. Saute onions in small amount of chicken broth. Once they soften, add the garlic and saute until garlic is fragrant - about one minute. Add the ground turkey to the onion mixture and cook over medium heat until thoroughly browned. Add the refried beans to the pan and mix until the beans are melted and mixed with the turkey mixture. Remove pan from heat and let cool. Mix the remaining broth and salsa in a shallow bowl. Dip tortillas in the salsa mixture, then line the bottom of a 9X13 pan with them until it is covered. Spread 1/2 of the turkey mix over the first layer of tortillas. Cover the turkey mix with about 1/3 of the cheese. Repeat with tortillas, turkey mixture and cheese. Top with a final layer of tortillas, the remaining cheese, then pour the remaining salsa/broth mixture over the top. Bake, uncovered, for 30-40 minutes.
