Ingredients
1 lb. ground turkey or chopped chicken or lean ground beef
1 C chopped onion
2-3 cloves garlic, chopped
3 T fresh mint or 1 T dried
1.5 t ground cinnamon
1/2 t peppercorns, crushed
1 C dried lentils
1 C brown rice
2 1/4 C brown turkey, chicken or vegetable broth
1 large fresh tomato, chopped, or 1/2 C tomato sauce
Preparation
In large frypan, brown meat over medium heat until no longer pink, about 5 minutes, breaking meat into crumbles. Add onion and garlic and cook until tender, about another 5 minutes.
Add mint, cinnamon and pepper and cook 2 minutes.
Add lentils, rice, broth and tomato and bring to a boil. Reduce heat, cover and simmer until rice is cooked, 45=50 minutes.
Optional garnish: Mix together 1/2 C crumbled feta cheese, 1 large chopped tomato, 3 T fresh mint and sprinkle on top.
