Ingredients

2 cups cooked turkey (or chicken)

3 T Butter

1/2 cup diced celery

1/3 cup thinly sliced onions

1/2 cup sliced carrots

2 cups fresh broccoli florets

3 T flour

2 egg yolks lightly beaten

1 1/2 cups chicken stock

3 T dry white wine

Minced parsley

Preparation

Remove skin and cut the turkey into cubes

Melt butter and saute vegetables (except broccoli) over med high heat until they begin to brown slightly. Add broccoli and saute until just tender.

Sprinkle flour over the top and stir in the stock until the sauce becomes smooth.

Remove from heat and stir in egg yolks. Add the turkey and stir over low heat until the sauce begins to thicken.

Remove from heat and stir in the wine.

Serve over rice and top with parsley.
