Ingredients
Meatloaf:
1 tbls Olive Oil
2 celery stalks chopped
1 cup diced white mushrooms
1 cup chopped red and yellow sweet bell peppers
2 garlic gloves
1/2 yellow onion diced
1 pound lean ground turkey
1/4 cup fine breadcrumbs
1 egg
1/4 whole milk
2 tbls worcestershire sauce
1 tsp kosher salt
1 tsp ground black pepper
Meatloaf Sauce:
2/3 cup Ketchup
2 tbls spicy mustard
1/4 packed dark brown sugar
1/2 cup left over morning coffer
Preparation
Preheat oven to 375 degrees.
Heat olive oil in a large sauté pan over medium heat. Add celery, onions, peppers and garlic, sauté till soft. About 6 minutes. Remove from heat and set aside to cool.
In a large bowl combine cooled sautéed vegetables, turkey, egg, milk, worcestershire and salt and pepper. Mix thoroughly. Add mixture to loaf pan.
Place in pre-heated oven, un-covered for 30 minutes or until browned. Remove from oven and drain an excess fat dripping from pan.
In a small sauce pan heat pan over medium heat and combine ketchup, mustard, brown sugar and coffee. Stir till ingredients have melted and combined. Let simmer till reduced to 1 cup. About 8 minutes.
Spoon reduced sauce over browned meatloaf and return to over for an additional 15 minutes. Remove from over and slice, serve with additional sauce on the side.
