Ingredients
18 oz turkey medallions or cut turkey breast
2 tablespoons sunflower oil
1 medium onion, finely chopped
1 garlic clove, finely chopped
7 oz cooking cream or substitute made from oats or soy
1/2 tablespoon mild mustard
Salt/pepper
1/2 tablespoon chives
Preparation
- Put some salt on both sides of turkey medallions.
- Place turkey in heavy based frying pan with oil over medium high heat and brown on both sides. Use a turner to remove from pan and set aside on a plate.
- Put onion in the pan and fry about 5 minutes stirring frequently.
- Return turkey to the pan. Cover with cream. Add garlic and mustard. Mix it all together. Bring to the boil and cook 12-15 minutes.
- Adjust the seasoning and add chives.
