Ingredients

1 egg

2 T water

1/4 c breadcrumbs

12 oz ground turkey

1/4 c grated parmesan cheese

2 T chopped Italian parsley

2 cloves minced garlic

Salt & pepper to taste

8-12 c low-salt chicken broth

1 c chopped carrots

3/4 c orzo

4 c chopped spinach

Preparation

Prepare the meatballs with the first 8 items, and bake them at 350 degrees for about 30 minutes.

Bring the broth to a boil, add carrots and orzo and simmer 8-12 minutes. Add meatballs and simmer until ready to serve. Stir in the spinach last and just simmer until tender.

You can also use escarole or any other green leafy vegetable. Season to taste and serve with fresh grated parmesan cheese
