Ingredients
Leftover turkey carcass, meat, giblets and neck
2-3 jars of turkey gravy
Basil
Bay leaves
Parsley
Sage
Rosemary
Thyme
Salt, to taste
Carrots, chopped
3 onions, chopped
Celery, chopped
Parsnip, chopped
Leeks, chopped
Garlic
Sugar, reserved, to taste
Preparation
Fill stew pot with water and bring to a boil. Add leftover turkey meat and boil for 2 hours.
Remove fat, bones, cartilage, etc from soup. Add gravy, spices and salt. Add all chopped vegetables and garlic. Simmer for about 1 hour longer.
Add sugar and continue simmering for about 1 more hour. Serve over egg noodles accompanied by a dark grained bread.
