1 turkey carcass
8 quarts water
3 carrots in thirds
3 celery ribs in thirds
1 whole onion quartered
1/2 bundle Italian flat parsley
6 clove garlic
6 fresh sage leaf
2 bay leaf
1 sprig Rosemary
3 sprig thyme
Mushroom peelings and stems
Salt and pepper *per cooks preference
Preparation
Fill large stock pot with cold water Add turkey Add veggies Add herbs Add salt and pepper Bring to boil and then summer three hours Skimming impurities as needed.
