Ingredients
8 oz. package spaghetti
4 tablespoons butter, divided
1 medium onion, chopped
8 oz. package sliced mushrooms
2 cups cooked and diced turkey (minimum)
2 tablespoons flour
2 cubes chicken boullion
1 cup hot water
1 cup evaporated milk, heated
1/4 cup sherry
1/4 cup green pepper, diced
1 tablespoon parmesan cheese
1 tablespoon breadcrumbs
Preparation
Cook spaghetti adding a tablespoon of oil, drain Melt 2 tablespoons butter in skillet and saute onion and mushrooms until liquid evaporates Scrape into bowl with diced turkey Melt and additional 2 tablespoons butter, add flour. Cook and stir for 2-3 minutes, do not brown. Stir in boullion cubes and 1 cup hot water and stir constantly until mixture thickens. Simmer 5 minutes. Add milk and sherry. Reduce heat and simmer 3 more minutes. Stir into turkey mixture along with green pepper. Stir in cooked spaghetti, add parmesan. Pour into casserole and top with breadcrumbs. Bake at 350 degrees for 30 minutes.
