Ingredients

1 lb extra lean ground turkey breast

1/4 cup steel cut oatmeal

1 can (14 1/2 oz) diced tomatoes

3/4 medium yellow onion

1 large egg

3 tbsp dijon mustard

2 tbsp ketchup

1 tbsp worcestershire sauce

1/2 tbsp olive oil

1 tsp minced garlic

1 tsp tobasco sauce

Preparation

  1. Preheat oven to 375°.
  2. Dice the onion.
  3. In a large bowl combine all ingredients and mix well.
  4. Cover a baking sheet with aluminum foil and coat lightly with an olive oil cooking spray.
  5. Form the turkey mixture into a loaf on the baking sheet.
  6. Bake for one hour or until thermometer inserted into center registers 170°.
  7. Let the turkeyloaf stand for five minutes before serving.
  8. Store any extra in the refrigerator or freezer. Sometimes this tastes better on day two.
