Ingredients
2 pkgs of (4) chicken sausage (such as sundried tomato and basil or garlic)cut into 1/2" thick slices
1 T. olive oil
1 med onion roughly chopped
2 T. roasted garlic
1 32oz can of diced tomatoes
1 c. black olives, halved
Salt and pepper
1 lb. gemelli pasta cooked according to pkg directions
Shredded Parmesean Reggiano
Preparation
In a heavy medium sized pan heat olive oil and add onion and garlic sauteeing until onion is opaque. Add chicken sausage and brown until heated through. Add diced tomatoes and olives. Salt and pepper to taste. Simmer until heated through. Place each pasta serving on a plate and top with sausage mixture. Sprinkle with parmesean before serving.
