Ingredients

1 3# pork roast

5 Large cloves garlic, unpeeled

1/2 cup Green Olives

1/2 cup Calamata Olives

1 sprig Sage

1/4 cup extra virgin olive oil

Cracked Black Pepper

Preparation

Put roast in Dutch oven. Sprinkle olives and garlic around roast. Put sprig of Sage on top and sprinkle cracked pepper over roast. (I like lots). Drizzle Olive oil over roast. Cover and bake for 2 hours. Remove lid and bake for 15 minutes to brown (if needed)
