Ingredients
6 medium baking potatoes
3 small onions sliced
1/3 cup butter
1/3 cup plain yogurt
1 egg, slightly beaten
1 tbsp. flour
Paprika
Preparation
Wash & prick potatoes. Microwave 8 minutes; turn potatoes. Cook 5 to 7 minutes more or until potatoes are tender. Cover with foil; let stand 5 minutes. Meanwhile cook onions in melted butter until soft. Preheat oven to 375 degrees. Cut potatoes in half. Use a spoon to remove cooked potatoe pulp from skins. Beat together potato pulp, yogurt, egg, and flour. Stir in onions. Stuff potato shells; sprinkle with paprika. Place potatoes in large baking dish. Bake 20 to 25 minutes or until heated all the way through.
