Ingredients

2 Sweet potatoes

1/4 cube tofu

soymilk (to consistency)

onions

rosemary

Walnuts

soft cheese if desired (blue etc)

Preparation

Cook sweet pot. in microwave for 6-8 minutes, till tender but still a bit rigid. Cut in half. Scoop out middle. Mix sweet potato with squeezed tofu and soymilk until smooth but still thick. Meanwhile, cook onions in oil, salt, pepper and Rosemary. When onions are golden brown and soft, add into sweet potato mixture. Make sure you pour oil from pan into mixture. Add in cheese if desired, be sure to mix in slightly so to keep clumps large. Mix together and spoon back into shells. Cook for about 12 minutes.
