Ingredients
4 oz bacon, diced
1 tbsp olive oil
1 medium onion, small dice
3 cloves minced garlic
2-3 stalks celery, small dice
2 tbsp fresh rosemary, minced
2 tbsp fresh sage, minced
1/2 tsp kosher salt
1/4 tsp black pepper
1/2 tbsp sherry vinegar
2-3 cups chicken stock
16 oz frozen lima beans
16 oz frozen chopped spinach
1 cup whole wheat orzo
Preparation
- Render bacon on high heat, take out with slotted spoon.
- Add enough olive oil to sautee on medium heat onion, garlic and celery until golden brown.
- Add herbs and sautee for 1 minute.
- Add vinegar, salt and pepper and sautee for 1 minute.
- Add lima beans and chopped spinach and enough chicken stock to cover & cook orzo, mix well and bring to a boil, reduce to simmer.
- Add orzo and simmer for 10 minutes.
- Add salt & pepper to taste.
- If orzo cooked, take off heat and let sit covered for 10 minutes.
