Ingredients
3 cups flour, divided
2 cups sugar
3 eggs
1½ cup vegetable oil
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons vanilla
1 cup pecans, chopped
1 cup coconut
3 cups apples, cored, peeled and chopped *
1 cup dates, chopped
Suggest using Granny Smith or Golden Delicious apples
Glaze for Apple Cake
Ingredients:
½ cup of butter (1 stick)
1 cup light brown sugar
½ cup milk
In a small sauce pan, melt the butter and gradually add brown sugar and milk. Cook until it bubbles on low and glaze gets a little thick; stirring gently to keep from scorching.
Pour over cooled cake, spooning until cake is glazed and glaze sets.
Preparation
In a large mixing bowl, combine sugar and eggs. Add oil gradually and then add vanilla. In a separate bowl, sift dry ingredients; reserving ½ cup flour to toss apples, dates and coconut in a bowl.
Add dry ingredients to eggs and sugar mixture; mix well. Add floured fruit and nuts; stirring until combined. Pour batter into a greased and floured prepared tube pan.
In a preheated 300 degree oven bake for 1½ hours or until a cake tester comes out clean. Carefully remove cake from the pan and cool on a rack. When cool pour glaze over the cake.
