Ingredients

½ cucumber

1 clove garlic, mashed

½ lemon

1 tbsp olive oil

9 oz Greek yoghurt

1-1/2 tsp fresh dill

1 Tbl. champagne vinegar

salt and pepper to taste

Preparation

1.Chop the cucumber into small cubes, place in a sieve and allow to drain. 2.In a large bowl mix the garlic, a good pinch of salt and one third of the mint. Add a squeeze of lemon and the olive oil, mix well. 3.Add the yoghurt, followed by the drained cucumber. Mix well and store in the fridge until needed.
