Ingredients
1 small cucumber, peeled
1 garlic clove, crushed, should be very spicy
1 C. plain whole milk yogurt
2 t. lemon juice
1 t. chopped fresh mint (optional)
salt and pepper to taste
Preparation
Peel cucumber and grate. Place in strainer. Drain of excess liquid. Blend all ingredients and chill. Serve with French bread or dolmadas.
